RECIPE
Ingredients:
1 CUP FLOUR
1/3 CUP WATER
100G LAMB MINCED MEAT
2 CUPS YOGURT
1 TSP GROUND GARLIC
1½ TSP SALT
PINCH BLACK PEPPER
PINCH CUMIN POWDER
1 TBSP SUGAR
1 TBSP VINEGAR
2 TBSP OLIVE OIL
2 TBSP BUTTER
2 TBSP PINE NUTS
CORRIANDER FOR GARNISH
Dough Prep:
1) Mix all dough ingredients in mixture.
2) Spread little oil on top, cover with plastic, and let rest for 1 hour.
3) Spread dough thinly, cut into 2 inch squares.
4) Salt minced meat and prepare dough paste.
5) Stuff dough square with 1 tsp minced meat, add dough paste on two sides of square, fold into triangle, add dough paste on one side, wrap around finger.
6) Place on floured tray, and cover with cloth to avoid drying. Repeat till dough finishes.
7) Extra ravioli place in the freezer, once frozen transfer to box to continue freezing.
Procedure:
1) In bowl mix yogurt, 1/2 tsp salt, pinch pepper, pinch cumin, 1 tsp garlic.
2) Add pot on medium low heat with 1 liter water, add 1 tbsp sugar, vinegar and olive oil. When water start simmering slowly, add ravioli approximately 30 pieces.
3) In a separate bowl, layer the yogurt and ravioli alternatively till you end up with the yogurt as the last layer.
4) Roast pine nuts with butter and oilive oil and pour over the yogurt.
5) Garnish with chopped coriander.
