Samo Khichdi

This recipe is as simple as can be, but tastier than you can ever imagine! Samo Khichdi, a faraali recipe that can be had during fasting days as well, is made by quickly sautéing all the ingredients together and cooking them for less than 10 minutes! Ginger and green chillies give this khichdi an element of spice, while peanuts contribute crunch, flavour and aroma to this delightful dish. Serve the Samo Khichdi immediately, as millet-based dishes sometimes get lumpy on cooling.

Preparation Time: 10 minutes.
Cooking Time: 11 minutes.
Serves 4.

1 cup sanwa millet (sama)
1 tbsp ghee
½ tsp cumin seeds (jeera)
¼ cup roasted and coarsely crushed peanuts
1 tsp finely chopped ginger (adrak)
1½ tsp finely chopped green chillies
Rock salt (sendha namak) to taste

For serving
Rajgira kadhi / Curds

1. Heat the ghee in a deep non-stick pan and add the cumin seeds.
2. When the seeds crackle, add the samo, peanuts, ginger and green chillies and sauté on a medium flame for 3 to 4 minutes.
3. Add 3 cups water and rock salt, mix well cover with a lid and cook on a medium flame for 6 to 7 minutes, while stirring occasionally.
Serve immediately with rajgira kadhi or curds.
