SAMBOSA RECIPE:
Ingredients:
500G LAMB MINED MEAT W/FAT
2 CUP FLOUR
4 TBSP OIL
1 TBSP GHEE OIL
4 SMALL DICED ONIONS
1 TSP SALT
½ TSP BLACK PEPPER
1 TSP TURMERIC POWDER
1 TSP GRINDED GARLIC
1 BUNCH DICED CORRIANDER
1 BUNCH DICED PARSELY
6 STRANDS GREEN ONIONS
WATER & FLOUR SEAL MIX
Recipe:
1) On medium high heat, add 2 tbso oil, and 1 tbsp ghee oil. Heat till hot.
2) Mix flour well to avoid oil lumps.
3) Add a little bit less than 1 cup water. Add little by little till you get a firm consistency. Knead by hand or mixing machine.
4) Cover with plastic bag and let it rest for 10 minutes.
5) On medium high heat add 2 tbsp oil, garlic, minced meat and mix till water dries. Add onions, 1 tsp black pepper, 1 tsp turmeric, 1 tsp salt.
6) Switch heat off, add diced coriander, parsley, and green onions. Leave it aside to cool.
7) Flatten the dough at #5 on a machine or by rolling pin. You want it thin but not to thin.
8) With a floured sambosa cutter, add dough on top, add minced meat mix inside.
9) Add flour & water together and mix. You want a thick watery consistency to create the seal mix.
10) Add seal mix on one side of sambosa, and close. Add sambosa on a floured tray and cover with cloth to avoid drying.
11) Remaining dough put inside bag to be used again.
12) On medium high heat, slowly lay down sambosa and fry for around 2 to 4 minutes. Make sure the heat is not too high or low.
13) Serve hot with dugous or lemon.
NOTE: If you which to freeze the sambosa, add the same floured tray with all the sambosa and put it in the freezer. Once frozen, remove from tray and add it in a box for storage and put it back in the freezer quickly.
